About oven temperatures

Ovens speak three different languages. British recipes lean on gas marks, most of Europe uses Celsius, and North American recipes use Fahrenheit — and increasingly every oven also has a fan setting that behaves like its own scale. Getting the number right is the difference between a golden bake and a burnt one, so a fast, reliable conversion is worth keeping close.

Celsius and Fahrenheit

These two convert with a fixed formula: Fahrenheit equals Celsius times nine-fifths plus thirty-two. So 180 °C becomes 356 °F, and a familiar 350 °F lands at about 177 °C. Ovens are not precision instruments, so rounding to the nearest handy number on the dial is completely normal.

What the fan setting means

A fan (or convection) oven circulates hot air, so food cooks faster and more evenly. The common rule of thumb is to set a fan oven about 20 °C lower than a conventional recipe temperature, which is the fan figure this tool reports. Check your appliance manual, since some manufacturers suggest a 25 °C drop instead.

How gas marks line up

Gas marks step in 25 °F increments from mark 1 at 275 °F upward, with the fractional ¼ and ½ marks covering the lowest settings.
